There is just about a week until grilling season begins! I’m thinking of making weekend grilling a thing at my house this year, so I’m testing out a few recipes for you to try out.

In my opinion, I already have some burger recipes on my site, but I thought it was time to make a veggie burger for all my vegetarian friends as well.

Here’s the best vegetarian burger you’ll ever make: Marinated Portobello Mushroom Burgers.

You know what? Whether you’re a meat eater or a vegetarian, these marinated and grilled portobello mushrooms make for an excellent topping for any regular hamburger.

Well, this is a great recipe that Apronese would recommend to you and your whole family.

Portobello Mushroom Buying Tips

Pay attention to how portobello mushrooms are priced when you buy them. In most cases, you’ll be able to find them in a two- or four-package format, either loose and priced per pound or packaged in sets of two or three for a set price.

Despite the fact that they are both the exact same product, you may find that the price difference between the two options is quite dramatic.

Currently, the loose mushrooms are priced at $5.99 per pound at my store. I purchased two packages of two mushrooms from a store for $3.99.

However, the package stated that the mushrooms were approximately 8 ounces in weight, or half a pound in weight.

This means that if I had purchased the packaged mushrooms, I would have paid $2 more per pound. I picked up two of the loose portobello caps and then left! .

Do I Have to Grill These Marinated Portobello Mushroom Burgers?

My first test of this recipe was to cook them in a skillet, and I found that it worked quite well, although you won’t get those pretty grill marks.

You just need to cook the mushrooms in a skillet over medium heat, flipping them over from time to time, until they release all their moisture and the liquid in the skillet has evaporated before they are done cooking.

As you can see from the step by step photos below, you can cook these marinated portobello mushroom burgers on an outdoor grill or by using a grill pan, like the steps in the steps below.

In the recipe I provided below, there is a cast iron grill pan that fits perfectly over the gas burners on the stove, and it has both ridges on one side and a flat griddle on the other side, both of which have ridges.

What to Serve on the Side

If you have a grill going, grill some veggies and make Grilled Vegetable Pasta Salad to serve on the side.

Other great sides that you can serve with these burgers are: Southern Style Potato Salad, Steak Fries, or a Classic Creamy Coleslaw that’s hot out of the oven.

Marinated Portobello Mushroom Burgers

The Marinated Portobello Mushroom Burgers are a great vegetarian option when grilling during the summer, as they offer deep savory flavor and are easy and quick to prepare.

Ingredients

  • 2 portobello mushroom caps (about 1/2 lb. total) ($2.94)
  • 2 Tbsp olive oil ($0.08)
  • 2 Tbsp soy sauce ($0.12)
  • 1 Tbsp apple cider vinegar ($0.03)
  • 1 tsp brown sugar ($0.02)
  • 1/4 tsp oregano ($0.02)
  • 1/4 tsp garlic powder ($0.02)
  • 1/4 tsp onion powder ($0.02)
  • 1 tsp smoked paprika ($0.10)
  • Freshly cracked pepper ($0.03)
  • 2 buns ($0.83)

Optional Toppings

  • 1 cup spring mix ($0.32)
  • 1 tomato ($0.70)
  • 1/4 red onion, sliced into rings ($0.07)
  • 4 Tbsp mayonnaise ($0.40)

Instructions

  • Prepare the sauce by stirring together olive oil, soy sauce, apple cider vinegar, brown sugar, oregano, garlic powder, onion powder, smoked paprika, and a little freshly cracked pepper (about ten cranks on a pepper mill).
  • Place the portobello mushrooms, gills up, in a shallow dish with the marinade on top. Pour some marinade into the gills of the mushrooms, then flip the mushrooms and pour the rest. Let marinate for 30 minutes, flipping once or twice.
  • Using a grill pan or grill, heat a medium to medium-high grill and add the marinated portobello mushrooms. Cook the mushrooms for about 7 minutes on each side until they are soft and have released their liquid.
  • The marinated portobello mushroom burgers can be served on a bun with a variety of toppings, such as mayonnaise, tomato slices, onion rings, lettuce, and spring mix.

*If you save the mushroom stems, you can use them later in an omelette (chopped), or you can put them in the freezer with the rest of your vegetable scraps to make vegetable stock in the future.

Portobello Burgers: How to Make Them – Step by Step Photos

In order to prepare the marinade, you’ll need 2 tablespoons of olive oil, 2 tablespoons of soy sauce, 1 tablespoon of apple cider vinegar, 1 tablespoon of brown sugar, 1/4 teaspoon of oregano, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1 teaspoon of smoked paprika, and a teaspoon of freshly cracked pepper (perhaps 10 turns with the pepper mill).

The portobello mushrooms with long stems should be pulled off the stems and be arranged in a shallow dish.

Pour some of the marinade into the gills of the mushrooms and place them in a shallow dish. Flip the mushrooms over, and pour the rest of the marinade over them.

Make sure the mushrooms are marinated for at least 30 minutes and that they are flipped occasionally during that time.

After heating an outdoor grill, grill pan, or skillet over a medium heat, add the marinated portobello mushrooms and arrange them on the grill.

Once the grill is very hot, cook the mushrooms on each side for about 7 minutes, or until they are soft, and most of the moisture has been released.
