Although canned salmon may be a little more expensive than tuna, it still makes a nice occasional treat, especially when paired with kale and pasta, two of the cheapest of ingredients.

When paired together, this kale and salmon caesar salad ends up to be quite affordable.

Everyone has their own recipe, it’s not obligatory to follow a completely different recipe, Apronese just gives you a guide. But make sure, this dish is delicious

Salmon Canned in Cans

When you consider the fact that wild caught fresh salmon will probably be at least double that price per pound, this 14oz can of salmon was a pretty good deal to me when I think that I bought it for only $3.99.

When I opened the can, it wasn’t too pretty at first, and the color wasn’t really pink, but once I removed the skin and broke it up, I could see that it looked just like canned tuna.

Not to look at, but it was still quite tasty.

Several weeks ago, I found salmon with skin and bones and I just scraped them off (you can eat them if you want) and removed any large bones I could find.

As a result of the gelatinization process during the canning process, most of the bones were quite thin and quite soft, so they were quite edible.

They even contained calcium, which is an important nutrient for our bodies.

What Can I Substitute for the Kale?

If you like, you can also make this salad with Romaine lettuce or even spinach, if you like as well, but remember, neither of them will keep well after being refrigerated to the same extent as the kale will.

What Kind of Dressing Should I Use?

Depending on your preference, you can use a non-creamy Caesar salad dressing (if you prefer) or a creamy version (Girard’s to be exact).

Nevertheless, I find that the creamy Caesar dressing goes really well with this salad, since it has a very creamy texture.

What Are the Options for Pasta Shapes?

I don’t know which pasta is better suited to this recipe, but you can use any sort of small or short pasta, like orzo, penne, or orecchiette.

If you prefer, you can skip the pasta altogether and use homemade croutons instead.

Caesar Salad with Kale and Salmon

It’s another way to get extra protein from canned salmon, and this kale and salmon Caesar salad isn’t just fast, but also tasty and filling.

Ingredients

  • 8 oz bowtie pasta ($0.75)
  • 6 oz chopped kale ($1.50)
  • 14 oz can wild caught salmon ($3.99)
  • 2 large hard boiled eggs (optional) ($0.54)
  • 1/2 cup shredded Parmesan ($0.96)
  • 1/2 cup (or to taste) creamy Caesar dressing ($1.16)

Instructions

  • It is important to follow the instructions on the package when cooking the bowtie pasta and to drain it in a colander afterward.
  • In the meantime, chop the kale roughly into small pieces, removing any large stems from the kale, and place the chopped kale in a bowl, drain the pasta once it has drained, and add it to the kale, stirring it gently to allow the residual heat to wilt the kale slightly.
  • The canned salmon needs to be drained and the skin and bones should be removed (if included) so that the meat can be chopped into bite-size chunks as you go along. Once that is done, peel and dice the hard boiled eggs.
  • Add the cooked salmon chunks, diced hard-boiled eggs, and shredded Parmesan to the spinach and pasta mixture, stir to combine, and drizzle with Caesar dressing before serving. Divide the salad between four portions for a meal-size salad or six smaller side salads for a side dish.

*As I mentioned, I used pre-washed and chopped kale from a bag. After it was chopped, I further chopped it into smaller chunks before it was used.

Caesar Salad with Kale and Salmon – Step by Step Photos

As the pasta is cooking, start by cooking the 8oz. bowtie pasta according to the package instructions.

While the pasta is cooking, prepare the kale. As I was looking through the whole bunches, I found that they were too expensive.

However, this bag for only $2.99 is roughly equal to one and half bunches, plus it has already been chopped up and has the stems removed.

The bag I used was about half full of kale, which was about 6 ounces in total.

Due to the fact that I intended to leave my kale raw, it was important to me to make the pieces as small as possible so that it would be easy to chew and digest.

In order to accomplish that, I chopped my kale up a bit more and pulled out any stems that I had left over.

The pasta can now be added to a large bowl together with the chopped kale and stirred up well. Allow any residual heat from the pasta to soften the kale for just a couple of minutes.

Take two hard boiled eggs and peel them as well as dice them.

I was very happy to find canned salmon that has been caught wild and I’m thankful that I didn’t take a picture of the part of the recipe when I opened the can.

Honestly, I didn’t take a photo of the opening because that was a horrible sight.

It is important to note that once I had scraped off the dark skin, removed any large bones, and broken it up into chunks, it pretty much just looked like tuna.

Even though it wasn’t as pink as it should have been, it still tasted great.

There was a lot of meat in that 14 oz. can of salmon, so I might try a smaller can and one more egg next time so I can make this salad even cheaper.

You just have to tweak those ratios sometimes.

This salad would be most effective if I used shredded Parmesan instead of grated, but grated will do if you have any.

I prefer shredded Parmesan over grated because I find it has a more potent flavor and makes a more striking visual appearance.

In my experience, it is a great way to save money on cheese, and it is even better if you buy it from the cheese counter as it costs about half the price.

Check both places if you are interested.

The pasta and kale are now ready to be assembled into the salad.

If you’re doing it all in one large bowl, just add the diced eggs, salmon pieces, and 1/2 cup of Parmesan crumbles to the pasta and kale, and toss to combine.

The final step in making the salad is to add some creamy Caesar dressing (I used approximately 1/2 cup for the entire salad) and stir it well to coat it in the dressing.
