This dish is easy to make, cheap to buy, deceptively filling, and delicious to eat, there is no doubt that I will never get tired of it. It is simple, easy to cook, and I can eat it throughout the week.
My favorite part of this recipe is that there’s very little sugar to be added because the bananas are so sweet. I used only 1/4 cup for the whole batch, but I probably could have reduced the sugar to two tablespoons.
Bananas are fabulous. Fresh blueberries make a wonderful match with the sugary bananas, so if you’ve got them, try this recipe! It’s a great way to use up your fresh blueberries if you happen to have them!

Blueberry Banana Baked Oatmeal
It is easy to prepare this baked oatmeal ahead of time and then simply heat and eat it each morning as it is. The baked oatmeal is packed with fresh fruit and rich, custardy oats.
Servings: 6 -8
- 1.5 cups mashed bananas (about 3 bananas) ($0.75)
- 2 large eggs ($0.50)
- 1/4 cup white sugar ($0.04)
- 3/4 tsp vanilla extract ($0.21)
- 1/2 tsp salt ($0.02)
- 3/4 tsp baking powder ($0.03)
- 2 cups milk ($0.50)
- 2.5 cups old fashioned oats ($0.43)
- 8 ounces frozen blueberries ($1.70)
- Firstly, preheat your oven to 375 degrees. Then, mash the bananas in a measuring cup, starting with two or three and adding more until you have 1.5 cups of banana mash.
- In a large bowl, combine the banana mash with the eggs, sugar, vanilla, salt, and baking powder. Whisk well to combine. Add the milk and whisk until smooth. Place the banana mash in the egg mixture and stir you make a smooth batter.
- I recommend using old fashioned oats and stirring them into the mixture before adding the frozen blueberries. When you have done this, it will help prevent the entire mixture from turning purple. Spray the bottom of a baking dish with non-stick spray and pour the oat mixture into it.
- Keeping the oven at 375 degrees F, preheat the oven to 375 degrees F and bake the cake for about 45 minutes or until the top is golden brown and there is no visible moisture in the center.
You can either serve them warm or you can refrigerate them until you are ready to eat them. You can also microwave them in the morning for a quick and filling breakfast that will keep you going until lunch.

For the banana mash, mash a couple of bananas first with a fork, and keep adding bananas until you have 1.5 cups of banana mash.
Make sure you don’t leave any large chunks in the mash (last time it took me four medium bananas, this time only three small ones).
Into a bowl, add the mashed banana, along with the eggs, vanilla, sugar, baking powder, and salt. Whisk until smooth, then add the sugar and baking soda to taste.
As a result, it will be much easier to achieve a smooth, cohesive mixture if you whisk the other ingredients before adding the milk. It is for this reason that it is done in two steps: the other ingredients have to be whisked first, followed by the milk.
After boiling the milk, add the dry oats. I found that stirring them in with a large spoon worked better than using a whisk, however, I was not in the mood to wash another utensil.
I love having frozen blueberries on hand when I have a busy week and I’m not able to buy fresh ones. They’re a great addition to many dishes, they’re cheaper than fresh blueberries, and you can keep them in the freezer for an extended period of time. I used half a bag of frozen blueberries for this recipe (and used the rest for my smoothie packs).
The blueberries should be frozen until you add them to the oatmeal so they don’t bleed purple color all over the dish. Adding them at the end also helps avoid this.
Pour the blueberry oat mix into a casserole dish sprayed with nonstick spray.
For about 45 minutes, bake the top of the oatmeal at 375 degrees until it is golden brown and no longer wet to the touch.
My goal with this baked oatmeal was to bake it 25 degrees higher than I do with my other baked oatmeals because I had little blueberry ice cubes floating around. I thought it worked out well for me.
This makes for a very quick, hearty breakfast every day of the week when you take it with a little bit of cold milk. Having this breakfast every morning is a very fast and easy way to start your day.
