Even though we had eaten it plenty of times at restaurants, we had never once been impressed, and didn’t understand its appeal. However, one day we decided to make some creamy coleslaw to go with a sandwich, and that coleslaw stole the show. It’s something about the creamy-crunchy combo that makes us keep coming back for more.
This creamy coleslaw recipe features pantry staples, such as Dijon mustard and honey, along with a tangy dressing. After that, you just need to add shredded cabbage, carrots, and sliced green onions to the dressing. This savory, crunchy delight can be piled onto a sandwich or taco, stuffed into a wrap, or enjoyed as in.
We love the sweet-tangy-creamy dressing over super crunchy cabbage. After one bite, we simply cannot stop. As a result, we made a “small batch” of this recipe. The total amount of cooking is about two cups, or just enough for four sandwiches.

Using Shredded Cabbage as a Shortcut
To save time and money, we used pre-shredded bagged “coleslaw mix” (shredded cabbage and carrots) for this recipe. In this way, you won’t end up with half a cabbage in your fridge. Because no matter how small a cabbage may be, it always seems too much.
But if you want to make this with the half head, you’ll need 3 cups of finely shredded cabbage and one medium carrot.
Keeping Coleslaw from Watering Down
There is a lot of water in cabbage, which is one of the reasons it is so crunchy. As the salt in the dressing draws the water from the cabbage through osmosis, your cabbage becomes softer and less crisp. You can prevent this from happening by storing your dressing separately from the shredded veggies. So, if you don’t plan to eat the whole batch right away, only add dressing to the portion you are going to consume.
Serving Ideas for Creamy Coleslaw
Anything BBQ or anything with buffalo sauce goes perfectly with creamy coleslaw. This creamy goodness perfectly balances BBQ sauce’s sweet tang and buffalo sauce’s fiery heat. In addition to tacos, it’s a great topping for bowl meals.

Ingredients
Dressing
- 1/3 cup mayonnaise ($0.55)
- 1/2 Tbsp honey ($0.06)
- 1 tsp Dijon mustard ($0.03)
- 1 tsp red wine vinegar (or apple cider vinegar) ($0.02)
- 1/4 tsp salt ($0.02)
- freshly cracked black pepper ($0.03)
Vegetables
- 1/2 14 oz. bag coleslaw mix (shredded cabbage and carrots)* ($0.75)
- 3 green onions ($0.17)
Instructions
- Prepare the dressing by mixing together the mayonnaise, honey, Dijon, red wine vinegar, salt, and pepper in a small bowl.
- Make slices of the green onions. Combine the coleslaw mix (shredded cabbage and carrots) with the green onions in a large bowl, then pour the dressing on top. Stir the dressing until the cabbage is evenly coated. Serve right away.

How to Make Creamy Coleslaw – Step by Step Photos
The first step is to prepare the dressing. In a small bowl, stir together 1/3 cup mayonnaise, 1/4 tsp salt, 1/2 Tbsp honey, 1 tsp red wine vinegar, 1 tsp Dijon mustard and some freshly cracked pepper ( about 5 cranks of the pepper mill).
Add 1/2 of the 14 oz. bag of coleslaw mix (shredded carrots and green cabbage) to a large bowl and add three green onions.
Prepare the dressing and pour it over the cabbage mixture…
Stir the dressing into the cabbage until it is evenly coated.
You can then dig in (or add it to sandwiches, tacos, or wraps, or serve it on the side with your ribs)! Yummy!!!
