Ground turkey can be kind of, well, boring if you don’t dress it up right. It comes with a homemade lemon dill yogurt sauce, crunchy cucumber slices, and some slivers of red onion, but instead of being topped with ketchup and mustard, these juicy burgers come with their own lemon dill yogurt sauce as a topping.

Is It Possible to Grill the Turkey Burgers?

You can certainly grill these burgers instead of cooking them in a skillet. You can use an outdoor grill or even a countertop grill that you can install indoors, like the George Foreman grill, and it will work just fine.

Why 19 oz. of Ground Turkey?

My understanding of ground turkey is very limited, so some brands sell it in 19 oz. packages instead of one-pound packages (if you work in that industry and know why, then please let me know).

There is still a possibility that you could make this recipe with only a one-pound package of ground turkey.

I would not adjust anything else in the recipe, but just make four patties rather than five so that they’ll taste better.

Mediterranean Turkey Burgers: What to Serve with Them

Having left over a half cucumber and a red onion from the recipe, I decided to make a small batch of my Super Fresh Cucumber Salad, which is the perfect accompaniment for these burgers.

There are a number of accompaniments that would complement the burgers, including Herby Potato Salad, Mediterranean Coleslaw, Steak Fries, Mediterranean White Bean Salad, Quinoa Tabbouleh, and even a simple green salad (mixed greens, tomatoes, and a vinaigrette).

Can I Use Fresh Spinach?

As with this recipe, you can use fresh spinach rather than frozen spinach if you like. You will want about 14.5 cup once the spinach is sautéed.

You’ll want to chopper the spinach until it is in small pieces so it’s easier to mix into the meat. It might also be good to sauté it briefly in a skillet to drain some of its water.

Ingredients

Lemon Dill Yogurt Sauce

  • 1/2 cup plain Greek yogurt ($0.50)
  • 1/2 Tbsp lemon juice ($0.03)
  • 1/8 tsp garlic powder ($0.02)
  • 1/8 tsp dried dill ($0.02)
  • 1/8 tsp salt ($0.02)

Turkey Burgers

  • 19 oz. ground turkey* ($3.89)
  • 1/4 cup sun dried tomatoes ($0.83)
  • 1/4 cup minced red onion ($0.08)
  • 2 oz. frozen spinach (1 cup when frozen) ($0.25)
  • 1/4 cup crumbled feta ($0.57)
  • 1 tsp dried oregano ($0.10)
  • 1/4 tsp garlic powder ($0.02)
  • 1/4 tsp salt ($0.02)
  • 1 Tbsp cooking oil ($0.04)

For Serving

  • 5 hamburger buns ($3.04)
  • 1/2 cucumber, sliced ($0.75)

Instructions

  • The first thing you should do is make the lemon dill yogurt sauce. You will need to mix together the yogurt, lemon juice, garlic powder, dried dill, salt, and crushed red pepper flakes. Refrigerate until ready to serve.
  • When preparing the add-ins for the turkey burgers, take the sun dried tomatoes and chop them finely. Also put the minced or diced red onion in a food processor and make the minced or diced portion into a fine dice. To thaw the spinach, squeezing out all the moisture from it is very important (2 ounces equivalent to about 1 cup when frozen, but 14.5 cups when thawed and squeezed dry).
  • Using a large bowl, combine the ground turkey, sun-dried tomatoes, red onion, feta, spinach, and dried oregano together with the garlic powder, sea salt, and dried oregano. Mix the ingredients together until the turkey is evenly covered with the sauce.
  • Make five burger patties of the turkey mixture by dividing and shaping the mixture into five equal portions. Make them as flat and wide as you can since they will shrink up and in while they are cooking.
  • As soon as the skillet is hot, add 11/2 Tbsp of cooking oil to it, then add three of the turkey patties, one at a time, and cook for 5-7 minutes on each side, or until browned, cooked through, and the remaining turkey patties are cooked through as well. Cook all the patties in the same manner with the remaining cooking oil.
  • It is recommended to smear some of the lemon dill yogurt sauce on a bun, add some sliced cucumbers and red onion sliced thinly before serving the turkey burger with the sauce.

*I used 93% lean ground turkey

How to Make Mediterranean Turkey Burgers – Step By Step Photos

Let the lemon dill yogurt sauce sit for a few minutes before serving, so the flavors can blend. Stir the 1/2 cup Greek yogurt, 1/2 tbsp lemon juice, 1/8 tad garlic powder, 1/8 tad salt, and 1/8 tad garlic powder into the yogurt and refrigerate until ready to serve.

You can also use plain non-Greek yogurt if necessary, but it will make the sauce less thick.

You will need to prepare the add-ins for the burger. I used dry sun dried tomatoes instead of the ones packed in oil. I minced or diced 1 1/4 cup red onion (save the remaining portions for burgers), and I crumbled 1 oz. feta (about 1/4 cup), and I thawed and squeezed out the moisture from 2 oz. frozen spinach.

When it is frozen, it contains approximately one cup, while when it has been thawed and squeezed dry, it is approximately 1/4 cups.

Combined 19 ounces of ground turkey with sun dried tomatoes, red onion, feta, spinach, 1 teaspoon dried oregano, 14 teaspoons garlic powder, and 14 teaspoons salt in a large bowl. (Sorry, I forgot the oregano, garlic powder, and salt until after the photo was taken, but it is worth it because it gives the meal quite a bit of flavor).

Once all the ingredients have been mixed into the turkey ground, make sure that all of them are evenly distributed.

The meat mixture can then be divided and shaped into five burger patties, which should be thinner and a little wider than you might expect, as they tend to shrink when you cook them, so make the patties thinner and wider than you would expect.

It is very simple to cook burgers in a skillet by adding a little bit of cooking oil to a skillet and heating it on medium heat.

Once the oil is hot, add a few of the burger patties and cook them for 5-7 minutes on each side until they are well browned and cooked. You can repeat this process with the remaining burger patties and the remaining oil.
