  • 1 bunch asparagus (1 lb.) ($1.88)
  • 2 cloves garlic ($0.16)
  • 1 Tbsp olive oil ($0.16)
  • 1/8 tsp salt ($0.02)
  • 1/8 tsp freshly cracked black pepper ($0.02)
  • 1 fresh lemon ($0.89)

Instructions

  • The oven should be preheated to 400ºF. Rinse the asparagus well, and cut off the dry or woody stem ends (about an inch is needed). Using two garlic cloves, minced them.
  • The baking sheet can be lined with parchment paper to make cleanup easier. On a baking sheet, place the asparagus along with minced garlic. Add the salt and pepper after you drizzle the olive oil over it. Using a tossing motion, coat the asparagus with garlic, oil, salt, and pepper.
  • Roast the asparagus for 20 minutes at 400°F or until they have browned to your liking (the roasting time may vary depending on their size). Once halfway through roasting, stir once more.
  • In the meantime, zest the lemon using a box grater or a small-holed cheese grater while the asparagus are cooking. The amount of zest you will need is about one teaspoon. Zest the lemon, then cut it into wedges.
  • As soon as the asparagus are roasted, add the lemon zest and a few squeezes of lemon juice. Then toss to coat. Salt and lemon can be adjusted according to taste. You can serve the remaining lemon wedges with it.

Turn the oven on to 400oF and preheat it. After rinsing one bunch of asparagus (about 1 lb. ), trim off the woody ends. Occasionally, we leave the rubber bands on while trimming to make the process easier. Take two garlic cloves and mince them.

You can line a baking sheet with parchment paper to make cleanup easier. Trim the asparagus and add it to the baking sheet with 1 Tbsp olive oil, minced garlic, and about 1/8 tsp salt. Add oil, garlic, salt, and pepper to the asparagus and toss until well coated. Place in the oven to roast.

During the roasting of the asparagus, zest a lemon. It will take about one tablespoon of lemon zest. Make wedges of the lemon after zesting it.

Depending on the size of your asparagus, roast for about 20 minutes, or until browned to your preference. About halfway through roasting, stir the asparagus. After roasting, add lemon zest and lemon juice. Toss the asparagus in lemon juice to coat. You can adjust the salt or lemon according to your taste.
