In my opinion, there is nothing more satisfying than a good veggie sandwich. It’s a combination of so many colors, textures, and flavors that it’s hard to resist.

Moreover, since these veggie sandwiches are flexible, you can make an ultimate veggie sandwich using just about anything in your refrigerator.

One of the most important qualities of a recipe or meal when it comes to eating on a budget is its ability to be budget friendly.

Because of its extreme flexibility and the likelihood that you will not be using the exact same mix of ingredients as I did, this will be more of a how-to than a recipe that Apronese would recommend for other people. friend.

In order to avoid this problem, and for the same reason, I did not provide you with a cost breakdown this time. Because some of these ingredients are almost impossible to accurately measure, let alone calculate a cost breakdown, I did not do one.

Although it would be more than $8 to buy a veggie sandwich from a deli, I would be willing to bet that I spent less than that.

In the event that anyone is interested in trying to duplicate my exact sandwich pictured above, I have attached a recipe card below that contains all the exact ingredients in the sandwich I made.

Step 1: You Can Choose Your Own Bread

For veggie sandwiches, I recommend a good bread, such as wheat bread, sourdough, focaccia, or ciabatta. In addition to holding up to all those lightweight veggies, you need something that will provide a little weight in your stomach next to them.

A no-knead bread or focaccia would be a great bread to make yourself if you want to make it yourself.

You can use an extra-large tortilla to wrap your veggie sandwich or even a pita pocket, but you will likely have to squeeze all the vegetables into it so that the pita pocket does not tear.

You can also use a large lettuce leaf as a wrap.

My first time trying this bread, and the bread was strong enough to hold the sandwich together, but it was a tad soft and the flavor was a bit too sweet for me. I am looking forward to trying it again.

Step 2: Decide What Spread You Want

In addition to adding moisture, flavor, and a little fat to the sandwich, using a sandwich spread also gives it a more satisfying mouthfeel, which all contribute to a better tasting sandwich.

There has been a lot of interest in my Scallion Herb Cream Cheese Spread recently.

I made it in a quick and easy manner by mixing together 2 oz of cream cheese with one slice of green onion, 1/2 tsp lemon juice, 1/8 tsp garlic powder, 1/8 tsp dried dill, and salt to taste. The result was a delicious spread that I could eat all the time.

Sandwich spreads that can be used on sandwiches include:

  • Boursin
  • Marinara
  • Guacamole
  • Hummus
  • Thick salad dressings, like ranch or green goddess
  • Mayo (or a pesto-mayo mix)
  • Pesto

Step 3: Cheese (Optional)

As my spread was technically a cheese, I did not add any extra cheese to it. It is important to add a bit of cheese to a veggie sandwich in order to make the sandwich more filling and tasty.

Here is some good cheese for veggie sandwiches:

  • White cheddar
  • Feta
  • Goat cheese (chevre)
  • Havarti
  • Swiss
  • Fresh mozzarella

Step 4: Get Your Veggies On

The fun part of this is that you can get really creative.

I pulled out a lonely carrot from my produce drawer, grabbed some leftover fresh spinach, chopped up some cucumbers, tomatoes, and sliced up some red bell peppers from yesterday to make this salad.

I also added some alfalfa sprouts to the sandwich because I like how they give the sandwich a crunchy texture.

I have also included some other vegetables that you may also want to include in the sandwich:

  • Sliced button mushrooms or grilled portobello
  • Avocado
  • Coleslaw (this would act like a veggie-spread combo ingredient)
  • Pickles
  • Red onion
  • Roasted red peppers
  • Fresh or grilled zucchini
  • Roasted beets (sliced thin)
  • Sauer kraut
  • Jalapeño
  • Fresh herbs like parsley or cilantro
  • Broccoli (chopped fine)

As much as you can, you should slice most vegetables very thinly to prevent them from sticking together.

Hard vegetables such as the carrot that I used need to be chopped into very small pieces, which is why I used a cheese grater to grate them.

I used a cheese grater to do my carrots, but if I was to chop something like broccoli finely, I would do it in half.

Step 5: Adding Extras To The Top

It’s never a bad idea to add a little spice to one sandwich with so many vegetables piled on it.

A slice of hard boiled egg would even be fun, but you can add Italian herbs, sunflower seeds, everything bagel seasoning, crushed red pepper, furikake, or nutritional yeast as well.

I always like to add salt and freshly cracked pepper to the tomato layer.

Ingredients

Scallion Cream Cheese

  • 2 oz. cream cheese
  • 1 green onion, sliced
  • 1/2 tsp lemon juice
  • 1/8 tsp garlic powder
  • 1/8 tsp dried dill
  • 1 pinch salt

Sandwich

  • 2 slices hearty bread
  • 6 slices cucumber
  • 2 slices tomato
  • 1 handful spinach
  • 1 carrot, shredded
  • 1/2 red bell pepper
  • 1 handful alfalfa sprouts
  • 1 pinch salt
  • 1 pinch pepper

Instructions

  • It is recommended that you stir the ingredients in a small bowl for the scallion cream cheese until they are well combined (I used a fork).
  • Toast one side of each piece of bread lightly and spread the cream cheese over one side of each piece of bread.
  • Slice the bread in half, pile the vegetables on top, then close the bread with a side of butter.
