It’s true that this little gem deserves its own post, rather than being hidden in the Chili Lime Shrimp Bowls recipe.
As it was made I could just sit and eat it out of the bowl as it was making the shrimp bowls, which is exactly how I wanted to do.
Basically, it is a simple but super delicious pineapple salsa. It is so versatile that you can use it for a wide variety of dishes.
Apronese has experienced and found that it can be used for chicken, fish, burritos, quesadillas, salads.
The sky is the limit. The only issue is that it will keep in the fridge for three or four days, but it will likely not last that long.
Is It Better to Use Fresh Pineapple or Canned Pineapple?
In the winter, canned pineapple is a convenient alternative to fresh pineapple when it’s in season and on sale.
When the pineapple isn’t in season, you can make this with fresh pineapple instead.
Although fresh pineapple gives you a better texture, the lime, cilantro, and red onion have enough freshness that you can make this pineapple salsa pop regardless of whether the pineapple is fresh or canned.

Pineapple Salsa: What to Serve with It
While pineapple salsa is great for chip dip, but we think you’ll use it in a myriad of dishes too.
The pineapple salsa tastes great with Coconut Jerk Peas, Green Chile Chicken Enchiladas, Roasted Cauliflower Taco Bowls, Cilantro Lime Chicken, and Sweet Potato Tacos, to name just a few.
Pineapple Salsa Made Easy
A simple, fresh pineapple salsa is a great addition to any summer dish, and it is perfect for topping corn chips, piling onto grilled meats, topping salads, or even adding to a frosty beverage.

Servings: 6 (1/3 cup each)
- 2 cups chopped pineapple ($0.67)
- 1/4 red onion ($0.17)
- 1 jalapeño (optional) ($0.11)
- 1 lime ($0.34)
- 1/4 bunch cilantro ($0.21)
- 1 tsp salt ($0.05)
- The pineapple should be chopped into a small piece size, and if you are using canned pineapple make sure to drain it well before cutting. You can save the juice for smoothies, marinades, and other recipes. Place the chopped pineapple in a bowl and mix well.
- You can finely mince the fresh red onion and add it to the bowl of your ingredients. Remove the seeds from the jalapeño by first cutting off the stem, then cutting the pepper in half so you can remove the seeds and then finely mince the remaining pepper. Add the jalape o to the bowl of your ingredients.
- In a bowl, place the chopped cilantro, squeeze the juice of one lime into it and stir everything together until all the liquid is drained from the cilantro leaves. This is important as the cilantro leaves will be watery when mixed with the other ingredients.
- You can taste and adjust the amount of salt to suit your own taste. Start with a teaspoon, add it to the salsa, stir it, taste it, and then add more as needed. I used one teaspoon total. Refrigerate the salsa until it is ready to consume. Stir to redistribute juices and flavor before eating.
*You can also use a 20 oz. can of pineapple tidbits packed in juice, drained.

Pineapple Salsa: How to Make it– Step By Step Photos
In order to slice your pineapple tidbits properly, you need to chop up about 2 cups of pineapple into small pieces.
You can use fresh pineapple, as I did above, or you can use canned pineapple.
If using canned pineapple, ensure that it is packed in juice only, and make sure that it is thoroughly drained before you slice it up.
A 1/4 red onion is finely chopped with a little bit of fresh coriander.
If you are using a jalapeño, make sure that the seeds have been removed before dicing them finely (I made my sauce for a spicy dish, so I did not use a jalapeño).
As well as adding the onion, cilantro, and jalapeño to the pineapple, you should also add about 1/2 teaspoon salt and add the juice from half a lime to the bowl.
You can adjust the seasoning of this salad by adding more salt or lime juice as appropriate.
It is great served chilled until you are ready to eat! Sometimes just a few simple flavors can make a big difference.
