It may be a little early to suggest that I have discovered one of the most refreshing drinks on the planet. Or, at least one of the most refreshing drinks.

There are many types of lassi, but one of the most common of them is a yogurt-based drink, which is sometimes flavored with fruit or other ingredients.

I LOVE this drink because it is so refreshing, light, and super fresh! It is so refreshing with a lot of flavor and lightness. I love how the tart plain yogurt really adds so much brightness to it. Adding some peppery ginger is a great way to spice it up.

There’s no doubt that the lassi I make is a lot lighter and fresher than my usual smoothie, so I find it to be a great snack for when I don’t want to be full for the whole day.

My normal smoothie recipes usually include frozen fruit instead of ice cubes, but I wanted to make this one a “drink” and not a thick, meal-like smoothie.

By adding ice to it, it makes it a very cold, liquidy drink. I chose plain yogurt because I always have that in my fridge and did not want vanilla to muddle up the flavor. You may also be able to use vanilla yogurt instead of plain yogurt.

The difference will be that the yogurt will taste more like a dessert. Still, the amount of honey you need will probably be lower if you use vanilla yogurt.

I would like to add one more thing to this article to let you know: if you don’t like fresh ginger, you might try another spice like cinnamon or cardamom.

The fresh ginger in this drink is quite spicy… but I ended up loving it.

Pineapple Ginger Lassi

Ingredients

  • 1/2 cup plain yogurt ($0.27)
  • 1/2 cup pineapple chunks with juice ($0.35)
  • 1 inch fresh ginger ($0.12)
  • 1 Tbsp honey ($0.11)
  • 4-5 large ice cubes ($0.00)

Instructions

  • There are many ways to prepare this smoothie. The first thing you need to do is peel the ginger and then grate it with a cheese grater straight into the blender (to catch the juices). Add the yogurt, pineapple chunks with juice, honey, and ice cubes.
  • Once the mixture has been blended until smooth, you can enjoy it right away.

You only need a few ingredients to prepare this amazing drink, yet another reason why I love it.

I love how simple the instructions are, and I appreciate the fact that the ingredients are readily available. I like to make sure the can of pineapple is cold before I begin to prepare it.

When you peel and grate a one-inch section of the fresh ginger, the juice that drips from the ginger should be captured in your blender along with all of the other wonderful things it will release as you grate.

There are about fifty chunks of pineapple in the measuring cup, as well as about a cup or so of juice from the pineapple.

I actually measured out the chunks first, before measuring out the juice, however, I’m pretty sure you can just fill up the measuring cup with both at once, so it will be about the same.

When the grated ginger is added to the blender along with the yogurt, pineapple (and juice), honey, and ice cubes, it creates a creamy shake.
