In my opinion, cabbage and noodles are a comfort food that is very simple and straightforward. The flavors aren’t complex or special in any way, they’re just straight up satisfying and comforting as a meal. Some people like to add smoked sausage to their cabbage and noodles to round out their meal.

However, I thought, “a couple of Cajun spices might also work really well in there!” If you wish to spice up your cabbage and noodles, Apronese suggest you try out these Cajun Cabbage and Noodles. They’re still satisfying and simple, just with a little Cajun kick to add a little zing to them.

Is Cajun Cabbage and Noodles Spicy?

There is no question that this is a must-do recipe. If you prefer, you can reduce the heat by reducing or eliminating the cayenne pepper, but I don’t recommend avoiding the drizzle of hot sauce that touches the top at the end. That little bit of vinegar aroma really brings everything together.

Cajun Seasoning from the Store Can Be Used?

As a matter of fact, many store-bought Cajun seasoning blends contain a large amount of salt, putting you at risk of over-salting your dish. Instead, for this recipe, I made a half batch of my own Cajun Seasoning Blend that I used for equal amounts.

How Should I Use Hot Sauce?

In order to stay with your Cajun/Louisiana theme, I recommend Louisiana Brand hot sauce, Cajun Chef hot sauce, Crystal hot sauce, Slap Ya Mama hot sauce, or Zatarain’s hot sauce as some of your options.

The Louisiana hot sauces are not always available outside of the region, so if you are in need of hot sauce outside of the region, you can still use Tabasco or your favorite hot sauce if that is all you can find.

What Is the Best Kind of Smoked Sausage?

There is no doubt that andouille will give you the most delicious Cajun flavor, but again, andouille is not always available.

As you can see from the picture above, any sausage with a good smoky flavor will do! I’m going ahead and openly admit that for this recipe, I bought the Kroger brand smoked sausage on sale for $2.50. Do what ya gotta do.

Cajun Cabbage and Noodles

The Cajun Cabbage and Noodles are a fun and delicious take on the traditional comfort food with a mix of Cajun spices, smoked sausages, and not a little hot sauce thrown in for good measure.

Ingredients

Cajun Spice Mix

  • 1 tsp smoked paprika ($0.10)
  • 1/2 tsp dried oregano ($0.05)
  • 1/2 tsp dried thyme ($0.05)
  • 1/4 tsp garlic powder ($0.02)
  • 1/4 tsp onion powder ($0.02)
  • 1/8 tsp cayenne pepper ($0.01)
  • 1/4 tsp salt ($0.02)
  • freshly cracked pepper (about 1/4 tsp) ($0.03)

Cabbage and Noodles

  • 1 Tbsp cooking oil ($0.04)
  • 13 oz. smoked sausage* ($2.50)
  • 6 cups shredded cabbage (1/2 of a 2.5 lb. head) ($0.95)
  • 1/4 cup water ($0.00)
  • 8 oz. wide egg noodles ($1.00)
  • 2 Tbsp butter (or more to taste) ($0.36)
  • 2 green onions, sliced ($0.11)
  • hot sauce to taste ($0..25)

Instructions

  • To make the Cajun spice mixture, combine the spices, then set them aside. Finely shred the cabbage, then mix it with the spices.
  • The cooking oil should be added to a large pot and the temperature set at a medium level. Slice the sausage, and then add it to the pot. Stir, and cook the sausage until it is well browned on all sides.
  • It is recommended that you begin boiling the noodles in water while the sausage is browning. Once the noodles have come to a boil, add them to the boiling water and continue to boil until they have become tender. Drain the noodles and serve immediately.
  • Into the pot with the shredded cabbage, add the Cajun spice mix, water, and stir to combine. Once the ingredients have been combined, place a lid over the pot and cook over medium heat, stirring occasionally, for about 5-7 minutes, or until the cabbage has wilted down.
  • During the wilting of the cabbage, add the cooked and drained egg noodles and butter to the cabbage and stir well, pouring it over the cabbage and stirring it to combine the two ingredients. Once the butter has melted, and is covering the cabbage and egg noodles, taste the mixture and add more salt if necessary.
  • The last thing you need to do before serving is to sprinkle each bowl of rice with green onions sliced thin and splash it with hot sauce.

*As I bought the sausage in a weird sized package of 13 ounces, you can use anywhere between 12-16 ounces of sausage for this recipe without having to make any adjustments to it.

Make Cajun Cabbage and Noodles – Step by Step Photos

Cajun Spices in a small bowl

First, make a Cajun seasoning mix. To make this mix, you will need 1 tablespoon of smoked paprika, 1/2 tablespoon of dried oregano, 1/2 tablespoon of dried thyme, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, 1/8 teaspoon of cayenne pepper, 1/4 teaspoon of salt, and a pinch of freshly cracked black pepper. Set aside.

Cook the cooked sausage for about 15 minutes over medium heat with 1 Tbsp of cooking oil added to a large pot. Slice 130 g of smoked sausage and add it to the pot. Stir and cook the sausage until it is nicely browned.

Shredded Cabbage

Start heating a separate large pot of water for the noodles. After the water has been heated, add 8 oz. wide egg noodles and continue to cook until they are tender. Drain the noodles in a colander. Also, shred about 6 cups of cabbage (about half of the 2.5 lb. head of cabbage).

When you start the recipe or if you feel you may need extra time for this step, you can do it before you begin the recipe instead of as the food is cooking. If you do not know how to sharp your knife yet, you can do this step before you begin cooking.

A few minutes after the sausage is browned, remove the sausage from the pot, add 1/4 cup of water, and the Cajun spice mix to the pot. Stir everything together, and put a lid on the pot.

The cabbage should continue to cook with the lid on, stirring occasionally, until the cabbage wilts, about 5-7 minutes after the cabbage is placed in the pot (about 5 minutes).

Adding the cooked and drained noodles to the pot along with 2 tbsp (or more) of melted butter will ensure that everything is combined and coated with the butter. Cook and serve right away.

As a final note, make sure to taste everything before serving and if necessary, add a little extra salt to enhance flavor. Sprinkle green onions over the dish and drizzle with a little hot sauce before serving.
