In our kitchen, parsley, coriander, and green onions are essential spices. They’re cheap, but add so much flavor and color to our meals that they’re worth buying even if I can’t use them all.

Apronese still enjoy finding recipes that use all of those ingredients, like this Scallion Herb Cream Cheese Spread, because less waste is always better.

It only takes a few minutes to make this aromatic, herb-infused cream cheese, but it tastes amazing and may even help you eat more vegetables.

Enjoy Your Vegetables

How might this help you eat more vegetables?

Scallion Herb Cream Cheese Spread tastes almost like ranch-flavored cream cheese, making it perfect for slathering over cucumber slices or slathering onto vegetable sandwiches.

Imagine this Scallion Herb Cream Cheese, avocado, cucumber, alfalfa sprouts, and tomato on a humongous vegetable sandwich.

Sizes of servings

For this recipe, we’ve set a serving size of 1 ounce or 2 tablespoons since that’s what regular cream cheese has. However, we know it’s tough to stick to just 2 tablespoons, so use a grain of salt.

Substitutions

No cilantro for you? Nothing to worry about. In the absence of it, the recipe will still be awesome. There is no need to replace it with anything else. Have you ever grown your own herbs? You might want to try adding some tarragon or even basil.A bowl of Scallion Herb Cream Cheese Spread next to a toasted bagel with cucumber slices

Step-by-step Photos of How to Make Scallion Herb Cream Cheese

Scallion Herb Cream Cheese Spread Ingredients in a bowl
Add 8 oz. cream cheese (room temperature), about 2 Tbsp finely chopped parsley, 2 Tbsp finely chopped cilantro, 1 sliced green onion, 1/8 tsp garlic powder, 1/8 tsp salt, and 1 Tbsp lemon juice to a bowl.
Scallion Herb Cream Cheese Spread mixed
Using a fork, mix and mash the ingredients until they are evenly combined. Probably you could use a hand mixer if you’re doing a double batch, but I thought it would be too small for one to be effective.
